Description

The pastry is simple and quick to prepare. Calzone, a pizza folded into a half-moon shape, is commonly found in central and southern regions of Italy. In Italian, "calzone" means "envelope with filling." For the filling, you can use several types of cheese, ham, salami, chicken, vegetables, or mushrooms. The filling shouldn't be too abundant—soft cheese and juicy tomatoes are enough. Typically, a large pizza is made for everyone to share, but according to tradition, each calzone with its filling is intended for one person. The dough is no different from regular pizza dough. Try it—it's a very juicy and delicious pastry. Serve it warm or chilled. Perfect with tea.

    Prepare all the ingredients from the list. You can use any filling you like.

    In a deep bowl, combine warm water, sugar, and yeast. Let sit for 10–15 minutes, until a characteristic foam layer forms on top.

    Then add the flour and mix.

    Pour in 1 tbsp of vegetable oil.

    Knead by hand into a soft, slightly sticky dough. Shape into a ball, coat with vegetable oil, cover the bowl with a towel, and let rise in a warm place for 1–1.5 hours. The dough should double in size.

    Sprinkle flour on baking paper or a special cooking mat. Divide the risen dough into two parts. Roll out each part into a circle—the thinner you roll it, the thinner the pizza will be. Prick the dough all over with a fork. Spread sauce on one half of the circle, leaving a small border around the edges.

    Sprinkle the sauce with some grated cheese. Any cheese that melts well will do; I'm using suluguni today.

    Place the sausage, sliced thinly, on top of the cheese.

    On top, I added sliced tomatoes. You can also add mushrooms, bell peppers, etc.

    Sprinkle the filling with the remaining cheese.

    Cover the filling with the second half of the dough and firmly seal the edges in any convenient way. Similarly, form a closed pizza using the second piece of dough. The top of the dough can be brushed with egg yolk, vegetable oil, or a small amount of tomato sauce.

    Bake in a preheated oven at 230-250 degrees for about 7-10 minutes. The closed pizza is ready.
