
Beetroot pizza dough with vegetables and mushrooms

1. I baked young beetroot in foil for 40 minutes at 200 degrees.

2. Let the beet cool slightly so it can be handled, peel it, and grate finely.

3. Dissolve the yeast in warm water, add a pinch of salt, 3/4 cup of beet, flour, and olive oil. Knead the dough—it will be sticky, so grease your hands with oil. Cover with a towel and let rise in a warm place for about an hour. The dough should double in size.

4. Wash and finely chop the vegetables, as the cooking time will be short.

5. Heat the pan with oil until very hot. Add the vegetables in the following order: onion, mushrooms, zucchini, bell pepper and paprika, garlic, sauce. Sauté the vegetables for no more than 4 minutes, add tomatoes, and remove from heat after one minute.

6. Line a baking sheet with parchment paper and brush with olive oil. With oiled hands, stretch the dough, forming low edges.

7. Drain the cooked vegetables in a colander to remove any excess liquid (if present). Fill the dough with the vegetable filling. Preheat the oven to 200 degrees, bake the pizza for 20 minutes.

8. 5 minutes before it's done, you can sprinkle the pizza with sunflower seeds or sesame seeds.
