
Pizza
Description
The bake comes together easily and quickly. The pizza turns out with a wonderfully thin crust that’s very straightforward to make. I looked for this dough recipe for a long time and tried many versions, but this one has stayed my favourite. You can choose the toppings to suit your taste. I went with the usual suspects—salami (or sausage), cheese, and the like. You can even buy the cheese and deli meat already sliced; that saves a lot of time when friends are on their way—in about a minute you can spread everything on the dough and pop it in the oven. Another plus of this dough is that you can freeze it. Just leave it at room temperature for a while and it’s ready to use, which is a real help when guests drop in unannounced. Nice with tea or coffee.

Prepare all ingredients.

Pour warm water into a deep bowl. Add the yeast and sugar, stir, and leave for 10–15 minutes.

Then add flour and salt.

Mix and pour in the vegetable oil.

Knead a soft, slightly sticky dough. Shape it into a ball, grease it with oil, cover the bowl with plastic wrap, and leave it in a warm place for about an hour.

The finished dough should double in volume.

Divide the dough in two. The second half can be frozen or used to bake another pizza with toppings of your choice. Grease the pan. Roll the dough out on a floured surface to the size of the pan (mine is 27 cm in diameter), transfer it carefully and shape small edges. Pierce the dough with a fork.

Spread tomato sauce over the dough.

Spread the topping on top. I’m using diced sausage, tomato wedges, olives, and sliced mushrooms.

Sprinkle the filling generously with cheese and bake the pizza in the oven at 250 °C for about 7–10 minutes (don’t overcook it!).
