
Georgian-Style Cabbage Pkhali
Description
A tasty appetizer for any gathering. Cabbage pkhali is served chilled, garnished with red pomegranate seeds, red berries, fresh herbs, and so on. This dish is very quick to prepare; you can make it ahead, for example the night before, and keep it in the refrigerator, garnishing it just before serving. It can be served warm or chilled.

Prepare the listed ingredients. If you're missing any spice or herb, make the dish without it — no big deal!

Bring the water to a boil in a pot and lower the head of cabbage into it; simmer for about 10 minutes.

Then remove the head of cabbage, carefully separate it into leaves, trimming them at the base. Cut the thick parts off the leaves and let them cool.

Put the walnut kernels into the food processor bowl, and add all the spices there as well, except for the hot ground pepper.

Chop the washed stems of green onions and parsley and add them to the container with the nuts.

Process everything for 5–6 minutes into fine crumbs, making sure no large pieces remain.

Cut the cooled cabbage leaves and add the cut pieces to a container.

Process everything in the blender bowl for another 4–5 minutes, then transfer the contents into a deep bowl.

Add ground hot pepper and carefully mix everything.

Form small balls from the mixture and place them on a dish; the mixture holds together very well.
