
Cabbage Pkhali
Description
The recipe won't take much time. Pkhali is a name for appetizers in general. You can make pkhali from beets, carrots, even eggplants. I prefer cauliflower—the pkhali turns out more delicate and pairs wonderfully with walnuts. To make cauliflower pkhali, you will need a small head of cauliflower (one that fits in the pot when boiling). For herbs, use cilantro. For spices, khmeli-suneli. The appetizer is ready. Serve immediately.

Prepare all the ingredients.

Boil the cauliflower.

Finely chop the nuts, herbs, and garlic.

Mix thoroughly. Add the spices and vinegar (to taste—some prefer more, some less).
