
Rooster in sauce
Description
1. Wash the rooster, pat dry, and cut into large portion pieces. 2. Season with salt and pepper to taste. 3. Coat the pieces evenly with flour on all sides. 4. Heat butter in a skillet. Place the rooster pieces in the hot butter and sear over high heat until golden brown. Transfer to a saucepan or another heavy-bottomed dish. 5. Peel and chop the onion and carrot into large pieces. Place in the skillet and sauté until golden, adding chopped garlic and thyme. Transfer to the pot with the rooster. 6. Pour a little wine into the skillet, scraping up all the pan juices, then pour everything into the saucepan. 7. Add half of the mushrooms to the saucepan. 8. Pour in the remaining wine and broth. Season with salt and pepper to taste. 9. Place over low heat and let simmer gently for a couple of hours. 10. Sauté the remaining mushrooms in a skillet with a small amount of onion and carrot. 11. Serve the rooster pieces in sauce with the sautéed mushrooms and a side dish of your choice. This is a delicious, hearty meal perfect for the whole family.
