
Cilantro Pesto
Description
It works for both special occasions and everyday meals. I suggest making an unusual pesto—with cilantro. Unlike basil, cilantro grows in almost every garden plot, so it is easy to find. You get a very original pesto with a slightly unfamiliar taste. You can use it as a sauce for pasta or serve it with various appetizers. I hope you like it! ;) Serve with greens and sauce.

1. Toast the almonds in a dry skillet over medium heat.

2. After roasting the nuts for a few minutes, transfer them to another dish, as they will continue cooking in the skillet and may burn.

3. Finely chop the cilantro. We suggest simply tearing it with your hands — this way you will preserve the nutrients of this aromatic herb.

4. Crush a head of garlic and add it to the herbs.

5. Pour the roasted almonds into the food processor and grind until fine.

6. To the chopped cilantro, add the freshly squeezed juice of one lime, salt, and Parmesan.

7. Mix everything again with the mixer. The mixture should look like in the picture.

8. While the mixer is running, add the olive oil and continue beating.

9. Transfer the finished cilantro pesto into a suitable container. The dish is ready. Enjoy!
