Description
Recipe for homemade sauce. 1. Place the peeled and chopped eggplant in a colander and mix with 2 tsp salt—let stand for 20 minutes. Rinse the eggplant and dry with paper towels, then set aside. 2. Heat olive oil in a 10-inch skillet over medium heat. Add the peppers and onion, cooking while stirring until vegetables become soft (about 10 minutes). Add the eggplant and continue cooking until tender (approximately 8 minutes). Add the tomatoes and cook for another 5 minutes. 3. Transfer the cooked vegetables to a food processor and add ricotta with basil. Blend until smooth to form a uniform purée. Season with salt and pepper. Perfect served with pasta, meat, and vegetables.
