
Plum Shortcrust Pie
Description
The pastry is prepared simply and quickly. In principle, the pie doesn’t have to be with plums: it can be made with any seasonal fruits and berries. And mascarpone can easily be substituted with ricotta or even regular strained cottage cheese. Serve it cooled or slightly warm.

1. Combine the butter at room temperature with the sugar.

2. Beat. Add the eggs one at a time and beat again.

3. Gradually add the flour and knead the dough. Divide it into 2 parts, wrap each in plastic wrap, and place in the freezer for 30 minutes.

4. Add the egg and powdered sugar to the mascarpone.

5. Remove the pits from the plums and cut them into quarters.

6. Grate one portion of the dough into a heat‑proof dish. Lightly press it down.

9. Sprinkle with sugar and cinnamon.
