Here’s a simple recipe for a blackcurrant shortbread pie that you won't be able to resist. Crispy base, juicy filling, and a very tasty meringue topping. Serve cooled or slightly warm.

1. To prepare the dough, mix the flour sifted with salt, sugar, and chopped butter. Place in a blender container and blend until a uniform crumb forms. If you don't have a blender, you can chop the butter with the flour using a knife.

2. Carefully separate the egg whites from the yolks. Set the whites aside for now, and add the yolks to the dough.

4. Roll out the dough into a thin layer. To make it easier to work with, you can place it between two pieces of plastic wrap.
