
Shortcrust pastry pie with cottage cheese and strawberry jam
Description
Homemade baking to go with tea. For this quantity of ingredients I used a 20 cm diameter baking tin. The strawberry jam should be thick; choose full-fat cottage cheese. Serve cooled or slightly warm.

It is very convenient to prepare all the ingredients before you start cooking.

First, prepare the dough. Pour the butter, melted over low heat in a saucepan, into a bowl, add 40 grams of sugar, and stir everything thoroughly with a whisk.

Beat in the egg. Whisk everything together.

Sift all the flour with the baking powder.

Knead a soft, elastic dough that does not stick to your hands. If necessary, add a little flour at a time until you get the right dough consistency. Divide the dough into 1/2 and 2/3 portions. Wrap the smaller portion in plastic wrap and place it in the freezer for 20 minutes.

Line the baking pan with baking parchment. Spread most of the dough in the bottom of the prepared pan and form the base for the future pie with sides about 4 cm high.

Spread strawberry jam over the bottom of the pastry crust and level it evenly with a spoon into a layer.

Prepare the cottage cheese filling. Place the cottage cheese in a bowl, crack in the egg, and add 40 grams of sugar.

Using an immersion blender, blend these ingredients until smooth.

Spread the cottage cheese filling in a layer over the jam layer.

Take the smaller portion of dough out of the freezer and grate it on the coarse side of a grater.

Spread the dough shavings evenly over the cottage cheese filling. Bake the pie in an oven preheated to 180°C for 40–45 minutes.

Cool the finished pie completely and only then cut it into serving pieces.
