
Shortcrust cake with dried apricots
Description
It pairs perfectly with tea and coffee. Adding sour cream to the dough does not compromise its crumbly texture; on the contrary, it becomes moderate. Pay attention to the dough kneading; it is important not to overdo the flour and kneading time. When the dough forms a ball, place it in the refrigerator. It is better to slightly under‑knead than to overmix. Serve warm or chilled. Perfect with tea.

Prepare the necessary ingredients.

Soak the dried apricots in water (so that the liquid slightly covers them) for about 20 minutes. Boil over medium heat after coming to a boil for 10 minutes. Cool.

In a deep bowl grate the cold butter, add 350 g of flour, leavening agent, and salt. Rub into crumbs.

Add sour cream and start kneading the dough. If the dough sticks heavily to your hands, add a tablespoon of flour from the remaining 50 g. Try not to overwork the dough; better to lightly dust it with flour.

Wrap the finished dough in plastic wrap and place it in the refrigerator for 30 minutes.

While the dough is cooling, prepare the filling. Place the cooled apricots in a blender, add half of the specified amount of sugar.

Pulse the dried apricots with sugar in pulse mode until smooth. Add the remaining sugar if needed. The filling should have a pronounced sweet taste, with no hint of sourness.

After the time has elapsed, remove the dough from the refrigerator and divide it into two unequal parts: 2/3 and 1/3.

Take the larger portion and roll it out into a circle about 28 cm in diameter.

Line the pan with parchment paper. Transfer the dough into it, shape the edges, and prick it.

Place the filling and spread it evenly over the dough.

Roll out a small portion as thin as possible and make cuts. If you don’t have a tool, a knife will do; make strips at a short distance from each other.

Transfer the top part onto the filling, spread it evenly, trim the excess, fold the edges and lightly press with a fork. Place it to bake in a preheated oven at 180 °C for 40 minutes.
