
Shortcrust pie with figs
Description
A colorful and delicious shortcrust pastry pie with fig filling can be made in the summer using ripe fruit. If desired, you can make the dessert with frozen figs, but in that case it is better to add a little more starch so it absorbs the excess liquid and thickens it. It can be served with tea or coffee.

Prepare the listed ingredients. Instead of butter, you can use margarine, but not a spread.

Melt the butter in a double boiler or in the microwave, but do not bring it to a boil. Add granulated sugar and salt to it, and whisk. Add the chicken egg and whisk everything again. Do not add baking powder, otherwise the dough will form bubbles during baking.

Add the wheat flour and begin kneading the dough.

Gather the shortcrust pastry into a ball, cover it with plastic wrap, and place it in the refrigerator for 15 minutes. In the meantime, rinse the figs and slice them.

After the specified time, spread the shortcrust pastry over the baking dish, extending it up the sides. Place the sliced figs in the center of the pastry.

Mix 1 tbsp of granulated sugar and starch, sprinkle it over the sliced fruit so that the juice it releases thickens immediately with the starch and does not soak into the dough. Preheat the oven to 180 degrees and place the pan with the dough in it.

Bake the pie for 30 minutes until golden brown, making sure it does not puff up in the middle. If this happens, pierce the bubble with a knife or skewer.
