Prepare all the ingredients. Soften the butter in advance at room temperature.

Combine the softened butter, eggs, salt, and 50 g of sugar. Beat. No need to beat vigorously; just enough for all the ingredients to be mixed.

Add the flour. Add the flour gradually, mixing the mass with a spoon each time.

Knead a soft dough that doesn’t stick to your hands.

Divide the dough into 2 parts. Wrap the smaller one and put it in the freezer, spread the larger one in a butter‑greased pan and form small edges. For now place the pan with the dough in the refrigerator.

Peel the quince if desired and cut into small cubes. Boil in water for about 10 minutes until tender.

Drain the water from the quince and spread it in an even layer over the dough in the pan. Sprinkle with sugar to taste.

Remove the frozen portion of the dough and grate it on a fine grater, evenly spreading the dough on top.
