
Shortbread pie with apricots

Nevertheless, it is a wonderful dessert for a sweet table—tender, with a summery apricot aroma. By the way, such pies are a famous treat in Austria. The fruity aroma of the baked goods will tempt even those who are indifferent to tea drinking. The ingredients are simple and affordable for any homemaker. Even a beginner cook can handle the preparation, and the result will please everyone at home and surprise guests. It can be served with tea or coffee.

Prepare the ingredients for making the pie.

Pour sugar into a deep bowl and add softened butter. Mix well.

Add sour cream and baking powder to the bowl.

Sifted flour into a bowl.

Knead a soft, elastic dough that does not stick to your hands. Chill it for 30 minutes.

Then divide the dough into two unequal parts. Roll out the larger part and place it in a baking dish, leaving a small rim. The diameter of my dish is 20 cm.

Arrange the apricots on the dough. Sliced or halved. They can be fresh, frozen, canned, or from jam.

Roll out the smaller portion of the dough and, using a pastry cutter, cut out stars or other shapes. Arrange them over the apricots.

Beat the yolk, brush the stars, and place the pie in the oven, preheated in advance to 170-175 degrees, for 25-30 minutes.

Let the finished pie cool slightly and serve it with dessert.
