Beat the butter at room temperature with a mixer, then add sugar. Beat again.

Add vanilla sugar and egg yolk. Beat well.

Sift the flour with starch. Knead the dough.

Roll the dough into a ball, cover with plastic wrap, and refrigerate for 2 hours.

Divide the dough into small balls, flatten each ball, and place it into a mold, shaping it into a tartlet.

Place one teaspoon of jam inside each, then top with leftover dough. Bake in the oven for 25 minutes at 200 degrees.
