Shortcrust pastry with cottage cheese filling
Description
Perfectly pairs with tea and coffee. There are several ways to make shortcrust pastry with a cottage cheese filling: as small pies, or as an open or closed tart. Depending on your taste preferences, you can choose the one you like best. You can also add raisins or other dried fruits, as well as dried berries, to the filling. Serve warm or chilled. Ideal with tea.
Instructions

Step 1

1. Slightly heat and rub the butter (if desired, margarine can be used in the recipe for making shortcrust pastry with a cottage cheese filling).
- 2
Step 2

2. Add sugar, salt, and eggs to the whipped butter. Continue beating until the mixture begins to thicken (this may take up to 10 minutes).
- 3
Step 3

3. Combine the mixture with the sifted flour and baking soda. Mix vigorously until the mixture becomes uniform.
- 4
Step 4

4. As a result, you will get soft, elastic dough. Roll it into a ball and place it in the refrigerator.
- 5
Step 5

5. While the dough is chilling, you can start preparing the filling. Separate the egg, reserving the yolk for brushing, and use the white in the filling.
- 6
Step 6

6. Mix together cottage cheese, sugar, sour cream, and egg white. Mix well (add candied fruits or dried fruits immediately if using). Add a little flour to prevent the filling from being too runny.
- 7
Step 7

7. Divide the chilled dough into approximately 18-20 equal pieces.
- 8
Step 8

8. Cut out small circles, place the filling in the center.
- 9
Step 9

9. Seal the edges tightly, place the buns on a baking sheet previously lined with parchment paper or greased with oil. Brush with beaten egg yolk and bake in a preheated oven for about 20-25 minutes. When the shortcrust pastry with the cottage cheese filling turns golden brown, the pastry is ready.
