Now, in a separate small container, beat the egg yolk with a fork or whisk. Add ice-cold water to it. You can chill the water in the refrigerator beforehand, or alternatively, use ice by placing it in the water for a short time.

Add the yolk with water to the crumb. Knead the dough by hand. Then wrap it in plastic wrap and put it in the refrigerator. Let it sit there for about half an hour. Done!
