
Shortbread cookies with apples
Description
The cookies will turn out crumbly and incredibly tasty if you let them cool after baking. Don't forget to brew some fragrant tea or coffee at that time and invite all your relatives to taste the dessert! During apple season, you can make the cookies every day, take them on a trip, to work, or to a picnic.

Prepare the listed ingredients.

Melt the coconut oil in the microwave, placing it in a deep container. Add the sugar and salt to the container and mix thoroughly. If desired, the coconut oil can be substituted with butter or margarine. Set aside 2 tbsp of sugar for sprinkling on the apples.

Crack a couple of small chicken eggs or one large one into a container. Beat thoroughly.

Add sifted wheat flour and baking powder.

Knead a firm shortcrust dough, place it in the refrigerator for 20 minutes, covering it with plastic wrap.

Line the baking sheet with parchment paper and grease it with butter. Preheat the oven to 180 °C. Shape the chilled short‑crust dough into balls in your palms, and place them on the baking sheet at equal distances from each other.

Wash the apple in water, remove the seeds by cutting it into quarters, then slice it. Flatten the dough balls into patties, but not thin, place apple slices on each of them and sprinkle with the remaining granulated sugar. Place the baking sheet in the oven and bake the cookies for 20–25 minutes until golden.

Remove the finished dessert from the pan with a silicone spatula, let it cool, and serve it at the table with hot tea or coffee.
