
Shortbread cookies with raisins
Description
Perfect with tea and coffee. I soak the raisins in rum before adding them to the dough, which gives the cookies a delicate and subtle aroma. Even if you're baking cookies for children, the rum won't hurt at all. I bake the cookies without adding eggs, which keeps the texture light. Serve warm or chilled. Ideal with tea.

Rinse the raisins and transfer them to a bowl, pour over rum, and leave for several hours. After the required time, place the raisins into a colander.

Place softened butter into the bowl of a mixer, add granulated sugar, and beat at low speed.

After beating, add vanilla, cinnamon, orange zest, mix and add coconut flesh, salt.

Add the flour and raisins last, mix well. Divide the dough into 2 parts, roll each into a log, wrap in parchment paper, and refrigerate for several hours.

After a few hours, take out the sausages and cut them into pieces (1-1.5 centimeters thick). Place the cookies on a baking sheet and bake at 165-170 degrees for about 12 minutes.
