
Shortbread cookies with egg yolks

Beat the yolks with sugar and vanilla sugar. Add melted butter (cool the butter beforehand).

Knead the dough until it doesn’t stick to your hands. If necessary, you can add a little more flour during the process. Wrap the dough in plastic wrap and place it in the refrigerator for 30 minutes.

Then roll out the dough into a sausage shape and cut it into pieces about 1.5–2 cm thick.

Transfer each piece onto a baking sheet lined with parchment paper. Press the cookies from above with your hands, achieving the desired thickness. The thicker the cookie, the softer it is; the thinner, the crispier it becomes. Bake in the oven at 180 degrees for about 15 minutes.
