
“Shortbread Cookies” with Blueberries
Description
The recipe won't take much time. Shaping the cookies is very simple, yet at the same time interesting. Of course, you can use any berry or make a mix of several varieties. In any case, it will turn out extraordinarily tasty. Serve warm or chilled. Perfect with tea.

Prepare all the necessary ingredients. Wash the berries.

Sift the flour and mix it with sugar.

Add room‑temperature butter to the flour and rub it with your hands into crumbs.

Beat the egg with a pinch of salt and add it to the flour mixture.

Knead a smooth dough. Roll it into a ball.

Place it in a bag and press lightly. This will cool the dough evenly. Put the dough in the refrigerator for 25–30 minutes.

Roll out the chilled dough into a sheet 0.5–0.7 cm thick. Take two cutters of different diameters (glasses can be used) and cut circles from the dough with the larger cutter. Then, using the smaller cutter, cut rings out of half of the circles. Brush the circle with egg yolk and place the ring on top. The small cut‑outs—the leftovers—can also be brushed with egg yolk and baked.

Fill the cookies with blueberries and drizzle with honey or jam. Also brush the top edge with egg yolk.

Bake the cookies in a preheated 180-degree oven for 15–18 minutes. Then let them cool.
