Prepare all the ingredients.

Pour boiling water over the peaches and let sit for 10 seconds, then place in cold water for 2-3 minutes. Peel off the skin. Cut in half.

Peel the lemon, cut the peel into thin strips, and squeeze the juice from the lemon. Pour water into a large pot, add lemon zest, all the spices, lemon juice, and vanilla extract.
