
Peach puree with custard cream

Step 1

Wash the peaches, cut them in half, and remove the pits. Place the peach halves on a frying pan, cut side up, and sprinkle with sugar. Pour 0.25 cup of water into the pan and cover with a lid. Cook over low heat for 35–40 minutes.

Cool the prepared peaches. Remove the skin and blend the flesh in a blender until smooth. Carefully spoon the puree into glasses.

Prepare a custard cream. In a bowl, whisk together 1/2 cup of milk, egg, and sifted flour. Pour the remaining milk into a saucepan, add sugar, and heat over low heat until boiling.

Pour a mixture of milk, egg, and flour in a thin stream into boiling milk, continuously stirring. Then remove the saucepan from the heat and continue stirring for another 3–5 minutes. Let the custard cool to room temperature. Whip the cream, then continue whipping while adding yogurt. Fold the custard into the whipped cream and gently mix.

Prepare the caramel. Pour sugar into a saucepan, add 1.5 tablespoons of water, and cook over the lowest heat for 3-4 minutes. Peel long, thin strips of zest from the orange and lime, add them to the saucepan, stir, and let the caramel cool completely.

Pour the creamy yogurt cream over the peach purée in glasses. Garnish with candied citrus peel.
