Persian lamb stew
Description
The recipe won't take much time. Persian lamb stew is a vibrant representative of Eastern cuisine. This dish brings together all the most popular ingredients favored in the East—lamb, chickpeas, and a variety of spices generously seasoned with chili. Today I'm sharing the recipe. Serve hot.
Instructions

Step 1

Peel the onion and slice into small rings. Transfer to a frying pan and sauté in vegetable oil.

Step 2

Finely chop the chili pepper together with the seeds. Peel the garlic and press it through a garlic press. Add everything to the onion.

Step 3

When everything is browned, add the lamb meat, cut into small cubes.
- 4
Step 4

Sear the meat until golden brown (about 5 minutes). Then add the spices, mix well and cook for another minute.

Step 5

Then pour in the broth, add the tomato paste. Let the stew simmer for 40 minutes.

Step 6

Soak the chickpeas overnight in advance so they can swell. Add the chickpeas and cook for another 30 minutes until they become soft.

Step 7

Serve the dish hot, adding finely chopped mint just before serving.
