
Barley with mushrooms
Description
The recipe won't take much time. It's perfect for fasting periods or a dietary regimen for those wishing to lose a few kilograms. Moreover, barley is highly beneficial on its own. It's an excellent source of dietary fiber, copper, and vitamin B1. Mushrooms also contain a large amount of antioxidants, protein, vitamin C, and iron. Dry fish should be soaked in boiling water overnight to soften.

Pour barley groats with water and set aside for 20 minutes to soak.

Meanwhile, heat a skillet, add oil and sauté the chopped onion. Cook it over low heat. Do not cook until fully browned or golden. Just let it become soft.

Drain the water from the mushrooms, but do not discard the liquid. Chop the mushrooms and transfer them to a frying pan.

Add barley, white wine, and mushroom liquid. Bring to a boil and simmer over low heat, stirring.

Since water will evaporate, you can add more as needed. Cook until the pearl barley is done.
