Description
The recipe won't take much time. Barley is known not only for its wonderful qualities: it's rich in minerals, vitamins, and protein. One of today's popular diets is based specifically on barley. But I suggest not just serving it as a side dish, but turning it into a complete main course. That's why I decided to enrich the barley with bacon and onion. See below for the results. Serve hot.

1. The process of cooking barley porridge is quite laborious and time-consuming. It is advisable to soak the grain overnight, then start cooking it in the morning. Barley should be soaked in plain cold water.

2. After soaking, rinse the grain several times more, then proceed to cook. I usually cook barley in a 1:3 ratio. During cooking, the grain will expand several times. Many people cook it without soaking, but then more water is needed. In our case, even two cups of water per cup of barley will be enough, since the grain has been pre-soaked.

3. When the water comes to a boil, the porridge should be salted and then cooked over low heat for one to one and a half hours.

4. Meanwhile, slice the bacon. I decided to diversify the porridge to make it a bit more "interesting." Plain barley works perfectly as a side dish, but with bacon and onions, it becomes a complete main course.

5. Fry the fat over low heat until golden brown.

6. Over low heat, fry the chopped onion together with the bacon.

7. When the porridge is almost ready, add the onion and bacon. Mix the porridge and serve hot.
