
Barley porridge with pumpkin

Prepare all the necessary ingredients.

Rinse the barley grains several times beforehand, then cover with water for at least 4 hours, or preferably overnight.

Drain the water from the soaked barley, transfer the grain to a saucepan, and add 600 ml of water. Place over heat and bring to a boil. Cook for 30 minutes.

Peel the pumpkin and grate the flesh on a coarse grater.

Add the grated pumpkin to the pot with the barley, mix well and cook for another 15–20 minutes. Add salt to taste, about 1/2 tsp.

Peel the carrots and grate them on a coarse grater.

Dice the onion.

Sauté the onion together with the carrot in vegetable oil until soft.

When the barley becomes soft, add it to the skillet with the sautéed vegetables, mix well, taste for salt, and add more if needed. Also season with pepper to taste. Cook for a few more minutes, then remove from heat.
