
Risotto with wild mushrooms
Description
In the original, this dish is called "Orzotto." The name comes from a combination of the Italian term for pearl barley (orzo brillato, perlato) and the Italian dish "risotto," which refers to a specific method of preparing rice with various additions. The result is an incredibly hearty and aromatic dish.

Prepare the ingredients.

Peel the onion and cut it into cubes. Sauté in olive oil until golden, then add the boiled mushrooms and cook until excess liquid has evaporated.

Rinse the grain thoroughly, add to the mushrooms and lightly sauté. Then add the wine, let it evaporate completely, stirring constantly.

When the wine has evaporated, gradually add vegetable or mushroom broth. The broth should barely cover the grain. Cook, stirring constantly, until the barley is fully cooked. Season lightly with salt.
