
Perepichi with onion and egg
Description
The pastry is prepared simply and quickly. You can make the pastries not only with an egg‑onion filling, but with any other filling as well. For example, you can confidently make them with mushrooms or potatoes. Instead of kefir, you can use any other fermented dairy product. Serve them cooled or slightly warm.

Prepare the ingredients.

Crack the chicken egg into a bowl, add salt, and pour in room‑temperature kefir.

Mix well and add sifted flour.

Knead the dough by hand.

Let the dough rest for 10–15 minutes to develop gluten. Then divide it into pieces.

Roll out each piece with a rolling pin. Form the edges.

Cut the boiled chicken eggs into cubes, and also cut the green onion. Combine both ingredients.

Transfer the pastries onto a baking sheet, which you should grease with vegetable oil. Place the filling.

In a separate bowl, beat the egg and pour it over the pastries. Place them in a preheated oven at 190 °C for 25–30 minutes.
