Quail Scotch Eggs

Description

The appetizer is quick and easy to prepare. Quail eggs can be served as an appetizer at a buffet (on skewers), and as a hot appetizer for a festive table. The dish is very easy to make. It can be served warm or chilled.

    1. Rinse the chicken fillet under cold running water, then pat dry with paper towels or a cloth towel. Cut into small pieces and place them in the blender bowl. Rinse the parsley leaves, pat dry, and add them to the blender; also add the pepper, mustard, salt, and garlic. Blend everything until finely chopped.

    2. Place the quail eggs in a small saucepan and cover them with cold water. Put the saucepan on the heat and boil the eggs until done; this takes approximately three to four minutes after the water comes to a boil. Carefully remove the cooked eggs and peel off the shells.

    3. Crack a chicken egg into a bowl, lightly beat it with a fork, then season with pepper and salt. Pour breadcrumbs and flour into separate plates. Now divide the chicken mince into twelve portions. Take one piece of mince in your hand and flatten it into a patty. Place a quail egg in the center of the patty.

    4. Then roll the flatbread into a ball. Do the same with the remaining eggs and filling. Coat each ball in flour, then dip in egg, then in breadcrumbs. Shake off excess breading. Heat a pot with oil (or a deep skillet) over medium heat. Add the balls and fry for about seven to eight minutes, until done.
