
Chinese-Style Quail Eggs

By the way, the longer the eggs are stored in the brine in the refrigerator, the more transparent the white will become. Serve with herbs and sauce.

Prepare the listed ingredients. For a richer color, add strong brewed plain black tea to the sauce.

Place the quail eggs in a saucepan or pot, cover with warm water, and boil for 5 minutes. Then let cool, peel, and rinse under water.

In a saucepan or small pot, combine soy sauce, grated ginger, black peppercorns, ground coriander, and seasoning. If desired, you can add other ingredients as well, but not salty ones. Bring everything almost to a boil, then let it cool slightly.

Choose a small narrow container: a jar or container. Place the peeled boiled quail eggs in it.

Pour the prepared sauce over them and let them cool. It is very important that the eggs are completely covered by it; otherwise, white spots will remain. After they have cooled, place them in the refrigerator right in the container with the sauce for 2–3 days. You can leave them for a week or even a month. The longer the dish stays in the marinade, the richer the flavor will become.
