
Quail Eggs Stuffed with Caviar

If you're wondering what appetizer to make for New Year's, I recommend checking out a simple recipe for quail eggs with caviar. Of course, you can prepare this same appetizer for any other holiday as well, but red caviar inevitably brings to mind New Year's :) The appetizer is quite expensive, but once a year—why not. Boil the quail eggs until done, peel them, carefully separate the whites from the yolks, keeping neat halves of the whites. We will stuff them.

Mash the egg yolks well with a fork, mix with grated Parmesan, finely chopped cilantro, and mayonnaise.

Mix well.

Take a serving plate and arrange fresh arugula leaves on it.

Stuff the quail egg halves with the mixture we prepared.

Place a little red caviar on top of each half of the egg. The appetizer is ready! :)
