
Perepechi from the Buranovo Grannies
Description
Homemade baked goods for tea. It turns out that in different parts of Udmurtia, perpechi (pies) are made in different ways. The grandmothers of Buranovo shared a recipe from southern Udmurts, where mashed potato or porridge is used for the filling. The dough is made from wheat flour or a rye–wheat blend. The filling should be thick; eggs are mixed into it, and on top it is poured with an egg-and-milk mixture. Such perpechi were mainly baked in winter or for holidays. Try baking them yourself. They go well with tea or coffee.

Prepare the necessary ingredients.

In a bowl, mix 1 egg, salt, sugar, and soft butter. You don’t need to mix vigorously. A fork is enough.

Add the milk. Stir with a fork.

Gradually sprinkle in flour and knead the unleavened dough.

The finished dough should be soft and supple, similar to pelmeni dough. Shape it into a round, cover with a towel, and put it in the refrigerator for half an hour.

While the dough is resting, prepare the filling. From boiled potatoes, make a thick mashed potato. Pour in 50 ml of milk and add salt. Mix well and cool until it reaches room temperature.

Prepare the custard. Whisk 2 eggs with a pinch of salt and 50 ml milk until well beaten with a fork.

Add half of the sauce (or mixture) to the cooled mashed potatoes. Stir to combine.

When the time is up, take the dough out of the refrigerator and divide it into equal portions. In my case, I ended up with 10 pieces of 47–48 grams each.

Roll out each piece of dough into a circle 12 cm in diameter. Form the sides. You should end up with a small basket. *Note: “в сочень” looks like a typo for “в кружок” (into a circle); if you meant something else, say what you had in mind.*

Arr arrange the baskets on a baking sheet lined with parchment paper. Spread the mashed potatoes inside, pour the egg mixture on top. Place them in an oven preheated to 180 degrees and bake for 30 minutes, until golden brown. Wait - I made a typo "Arr arrange". Fix.
