Description
Delicious baked treats for the whole family. Tatar cuisine is rich in various dough-based dishes with meat filling, and in my opinion, this recipe for peremyach is one of the best. Since I really love such dishes, these cute little buns became a real find for me, as they are quite easy to prepare, and their taste is simply superb. Believe me, you've never tasted anything quite as delicious, because this dish isn't available on every corner. However, anyone can make peremyach at home—no special skills are required, just the desire to enjoy a tasty meal and a bit of time. Serve them cooled down or slightly warm.

Step 1

In a deep container, add the yeast and pour in warm water (30–35°C), then mix. Gradually add 3 tablespoons of flour, stirring constantly. When the mixture becomes smooth, sprinkle a 0.5 cm layer of flour on top and set aside in a warm place for an hour. When the starter has doubled in volume and starts to sink, it is ready.

Next, we proceed with the dough: sift the flour and mix it with the baking powder. In another bowl, break the egg, add milk and a pinch of salt, then mix until smooth.

Add the starter to the prepared mixture and stir. Pour everything into a pot and gradually add flour, kneading the dough. When it becomes difficult to mix with a spoon, transfer the dough onto a floured surface and continue kneading by hand. Place the finished dough back into the pot, cover it with a towel, and set in a warm place for an hour. After that time, thoroughly knead the dough again and return it to the warm place for another hour.

While the dough is rising, we'll prepare the filling. Place the ready-made minced meat into a bowl, add chopped onion, salt and pepper to taste, then mix everything well.

When the dough is definitely ready, we proceed directly to shaping the dumplings. Tear off pieces of dough the size of a small apple and roll them into balls. Place them on a flat surface, spaced apart from each other, cover with a towel, and let them rest for 20 minutes.

Now take one ball in your hands and slightly flatten it. Place 1.5 teaspoons of filling in the center of this flat disc.

Next, we press the filling into the flatbread, then twist the edges around in a circle to create a "gathered" effect, leaving a small hole in the center. Repeat the same process with the remaining dough balls. Then, place the buns aside for another 20 minutes to rest and rise, covering them with a towel.

Pour vegetable oil into a high-sided frying pan. When the oil is well heated, place the peremyachis in it with the hole side down. Fry each side until golden brown. Then enjoy the delicious taste of this treat.
