
Peppercorn steak

1. Crush the whole black peppercorns in a mortar. Freshly ground pepper has a fantastic aroma and flavor.

2. Place the pepper from the mortar onto the bottom and press the meat into it. Flip over and repeat.

3. Heat the vegetable oil in a frying pan over high heat until very hot.

4. Sear the steak in oil. Cook each side for 3-4-5 minutes, depending on whether you prefer your steak rare, medium, or well done. Do not pierce the steak with a fork (you may only press it down lightly). It is important to keep the juices inside the meat.

5. Transfer the steak to a plate and let it rest. Meanwhile, prepare the sauce. Pour grape vinegar into the skillet (left on the heat after removing the meat). Use a wooden spatula to scrape the bottom of the pan, loosening the meat and pepper residues.

6. Add the sour cream to the vinegar and heat it. Remove from heat when the sour cream begins to bubble.
