
Peppers with Carrots for Winter

1. Wash the peppers and remove the seeds. Blanch in salted boiling water for 3–5 minutes, then drain in a colander to let the water run off.

2. Finely shred the cabbage, add grated carrot, garlic, and chili pepper. Mix well, season with salt to taste — and let the vegetables sit for a while.

3. Pack the vegetable-stuffed peppers into sterile jars. Spread any remaining filling evenly among the jars. Bring water to a boil with salt, sugar, and vinegar. Pour the liquid over the jars, sterilize for 15–20 minutes, and seal for winter storage.
