
Peppers with Onion for Winter
Description
Homemade preserves keep for a long time. I think that for many people, peppers prepared this way are their favorite winter treat, because in appearance, aroma, and taste they remind you of sunny summer. Usually, when it comes to canning, garlic is somehow traditionally added to peppers, but I, for example, prefer a different approach, and I'll gladly share it with you and tell you about it. Jars keep for up to a year in a cool place.

First, clean and rinse the vegetables, and slice the carrots and onion into rings. If the pepper is large, cut it into smaller pieces; if it's small, like mine, there's no need to cut it.

Now pour all the spices into a small saucepan and toast them for a couple of minutes until they give off a noticeable aroma. Then pour in the vinegar and water, add the sugar and salt, and mix everything together. When the sugar granules have completely dissolved, turn off the heat and let the marinade cool slightly.

If you will store the jars in the refrigerator, you do not need to sterilize them. If you will store them elsewhere, be sure to sterilize them for 10 minutes. Then pack the peppers into the jars, layering them with onion and carrot.

Top with a sprig of fresh dill or other herbs.

Pour the marinade over the peppers and seal the jars. When they have cooled, store them in a cool place.
