
Peppers, Pickled with Cabbage

Prepare all the ingredients. Wash all vegetables in advance and pat dry.

Peel the carrots and grate them on a Korean-style carrot grater.

Cut off the tops of the peppers, stems included, and remove the seeds and membranes.

Thinly shred the cabbage.

Mix the cabbage with the carrots. Add salt.

Massage the cabbage with your hands. Let it stand for 10–15 minutes until it softens and releases its juice.

Stuff the peppers with cabbage. This should take about half of all the cabbage.

Place a little of the remaining cabbage on the bottom of a clean sterilized jar.

Then start placing the peppers, and fill the gaps with cabbage. Pack tightly so the peppers and cabbage are covered with juice.

Fill the entire jar this way until you run out of peppers. The top layer should be cabbage. Let the vegetables ferment for 5–7 days. Each day, pierce the cabbage twice with a wooden stick and release the air so it does not turn bitter. Then transfer the finished peppers with cabbage to the refrigerator for storage.
