1. Wash the peppers thoroughly. You can leave the stems on, since they're handy to hold while eating. Place the washed peppers in a pan and fry in vegetable oil for 30–50 minutes, turning every 2–3 minutes. Don't be afraid to fry them well: the peppers should become soft, and it's fine if the skin turns dark.

2. Pour vinegar and vegetable oil into a bowl and squeeze in the garlic.

3. Let the roasted peppers cool slightly, then peel them and nick the tips so the juice can drain out. Place the peppers in a dish with the garlic dressing.
