Hot peppers for winter

Description

Before you start canning, be sure to sterilize the jars and lids. Wash the peppers, peel the garlic, and measure out the sugar and salt. The amount of water is approximate: once you pack the peppers into the jars, pour boiling water over them, let stand for 20 minutes, then drain this liquid, add the spices, bring to a boil, and add the vinegar at the very end. I can peppers in tall, narrow jars, which helps reduce the amount of brine. See the recipe. The jars keep for up to a year in a cool place.

    Prepare the ingredients and sterilize the jars and lids.

    Place peeled garlic at the bottom of the jars; cut large cloves in half.

    Pack the hot peppers tightly into jars.

    Pour boiling water over the peppers, cover the jars with lids, and leave for 20 minutes.

    After 20 minutes, drain the liquid from the jars into a saucepan. The amount of water is approximate and depends on how tightly the peppers are packed in the jars. Add salt, sugar, coriander, and allspice to the saucepan. Bring the marinade to a boil and simmer for a minute. Pour in the vinegar and stir.

    Pour the spiced marinade over the peppers.

    Turn over and wrap in a blanket for 24 hours.
