
Stuffed peppers with vegetables

First, carefully sort the walnuts and grind them in a mortar. Pour the walnut oil into a cup, then transfer the walnuts to a blender. Add garlic, khmeli-suneli, a little salt, and half of the cilantro, and blend everything into a paste.

Now pour a couple of tablespoons of wine vinegar and a little cold boiled water into the blender and mix. We should get a mixture with a consistency similar to sour cream.

Pour the remaining nut oil (or regular vegetable oil) into a skillet and sauté the grated carrots and diced onion until soft.

Add the cooked rice and khmeli-suneli to the vegetables.

Chop the second part of the cilantro and place it in the pan as well, add salt to taste, and mix everything together.

Now we remove the seeds and membranes from the peppers, rinse them, and fill them with the prepared stuffing.

Pour a little oil into a frying pan and fry the stuffed peppers for about 15 minutes over low heat. Then cover the pan with a lid and simmer the peppers for another 10-15 minutes over the lowest heat.

Now pour the prepared sauce into the frying pan, add a couple of spoons of water, and simmer the peppers over low heat for about 25-30 minutes. Now our dish is ready, enjoy your meal!
