
Stuffed peppers with meat and zucchini
Description
The recipe won't take much time. Stuffed peppers are easy to prepare. Fresh bell peppers can be quite expensive during winter. In such cases, I always have canned peppers prepared in summer. They're already cleaned and ready for stuffing. You can also use frozen peppers available in any supermarket. This recipe will be especially relevant in summer. Peppers stuffed with meat and zucchini in tomato sauce with vegetables make an excellent main course for lunch, a hearty dinner dish, or a delicious hot dish for a festive table. Aromatic, juicy, and very tasty, it will surely delight your family and guests. Serve hot.

Prepare the ingredients for making stuffed peppers.

Soak the white bun in cold water, then squeeze it dry. Wash half of the onion. Wash the pork meat. Pass all these ingredients through a meat grinder and mix well. Add cooked rice.

Wash the zucchini, grate it, and add it to the minced meat.

Salt, pepper, and mix the pepper filling.

Finely chop half an onion. Grate the carrot and add it to the onion in a heavy-bottomed pot or Dutch oven.

Sauté the onion and carrots in sunflower oil in a saucepan. Add tomato paste.

Clean and wash the bell peppers, then fill them with the zucchini and meat stuffing. I used ready-to-stuff canned peppers.

Pour 400-450 ml of water into a saucepan with onion, carrots, and tomato paste. Salt the sauce and add sugar to taste. Mix, then place the stuffed peppers into the sauce.

Cover the pot with a lid and simmer the stuffed peppers over medium heat for 40-45 minutes, until cooked through.
