
Stuffed peppers with chicken
Description
The dish is prepared without unnecessary complications. Stuffed peppers with chicken is a recipe that can't be called classic. Usually, stuffed peppers are braised in a casserole with a large amount of liquid (at least that's how my mom does it), and they are filled, as the name suggests, with minced meat—beef or chicken. In our case, however, the peppers are stuffed with chicken pieces, making the dish very unusual, unexpected, and new. Therefore, I dedicate this recipe primarily to those who love experimenting. Prepare all the necessary ingredients

First, dice the celery root into small cubes.

Then chop the carrots just as finely.

Fry them in a pan with oil.

Slice the leek.

Then cut half of a red bell pepper into cubes.

Then cut the cherry tomatoes into quarters.

In the skillet, where onion and celery are already simmering until golden brown, add the pepper, tomatoes, and leek.

Wash the bell peppers, carefully cut off the top part (we will need it later). Remove the seeds.

Then we blanch the peppers for a short time in boiling salted water.

Meanwhile, in a separate skillet, sauté the chicken cut into small pieces.

Salt and pepper the chicken, then sear briefly. Once it develops a very light golden color, transfer it to the pan with the vegetables.

Mix everything well and quickly sauté.

Place parchment paper on a baking sheet and grease it with oil.

Stuff the peppers with the filling, pressing it in tightly.

Cover the peppers with their caps and place them in a preheated oven at 180 degrees to bake until tender (10-20 minutes).
