Chili Peppers for Winter

Description

Home preserves keep well for a long time. First, prepare the jars and lids: wash them and sterilize them by any convenient method (for example, I sterilize the jars over steam and boil the lids in hot water). Next, inspect and wash the peppers; they should be ripe and healthy, with no spots or damage. If you have tall jars, can the peppers whole with the stems on. In the classic version, pepper preserves use only vinegar, sugar, and salt. I suggest adding a few allspice berries, a couple of garlic cloves, and a couple of slices of ginger root. Believe me, the flavor and aroma are wonderful. The preserve is ready for winter storage.

    Place the chili peppers in a clean sterilized jar. If a pepper is too long to fit in the jar, cut it to the required length and use the remainder as rings. For a narrow tall 500 ml jar you will need 5–6 peppers (depending on how thick they are).

    Bring water to a boil in a kettle and pour boiling water over the peppers.

    Cover with a lid and leave for 20 minutes.

    Drain the water and measure how much you have; the amount will be different each time, depending on how tightly the peppers are packed in the jars. Add peeled, sliced garlic, ginger root (I cut it into matchsticks), and allspice berries. Calculate the salt and sugar based on the weight of your water. Bring the marinade to a boil.

    Pour 2 tbsp of 9% table vinegar into the jar and cover the peppers with the marinade. Screw the jar on tightly.

    Turn upside down and wrap in a blanket overnight. In the morning, move to the pantry for long-term storage.
