
Peppers
Description
Choose sweet, large bell peppers with a blunt end so they stand steadily during baking. You can prepare the "Taco" spice mix yourself. For this, combine 1 tablespoon ground chili, 1 ½ teaspoons ground cumin, 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon paprika, ½ teaspoon garlic powder, ½ teaspoon onion powder, ¼ teaspoon cayenne pepper, and ¼ teaspoon oregano.

Rinse the rice in cold water 7 times, cook in clean water (1:2) until done, then drain. Wash the vegetables, peel the onion.

Cut off the tops of the peppers, remove the cores and seeds. Place in the oven and bake at 180°C for 20 minutes.

In a skillet, heat vegetable oil, brown the ground meat until golden, add chopped onion, season with "Taco" seasoning, and cook for another minute.

Add the corn, rice, beans and mix.

Pour in the crushed tomatoes in their own juice, simmer for 5 minutes.

Add the grated cheese (50 g), mix well, and remove from heat. Season with salt to taste.

Fill the peppers with the prepared filling and sprinkle with the remaining cheese on top. Bake in the oven for 15 minutes, until the cheese melts.

For guacamole, mash the avocado flesh into a puree and mix with lemon juice, garlic, salt, and olive oil (1 tbsp).

Serve the finished "Taco" peppers with a spoonful of guacamole and shredded cheese.
