Description
This dish is versatile because it can be served both hot and cold. Served cold, it makes an excellent light appetizer to accompany wine; served hot, it works perfectly as a main vegetarian dish or as a side dish to meat or fish. Peppers need to be washed, cut in half, cleaned of cores and seeds, and dried.

Place the washed and cut spinach into a pan with olive oil. Simmer covered for 2 minutes, then uncovered for another 2 minutes.

In a blender, process the washed parsley, pine nuts, lemon juice, a spoonful of olive oil, Parmesan, and garlic until smooth. Season with salt and pepper to taste.
