
Peppers with chicken mince
Description
Not only in summer, but at any other time of the year, you can prepare delicious stuffed peppers. To make peppers with chicken mince, I take about a kilogram of peppers, preferably different colors. Chicken mince is the lightest and least caloric, and it can be mixed with rice. See the recipe below.

Rinse the rice and cook until half done.

Mix the chicken mince with rice, add spices.

Peppers are cleaned, stems trimmed, cores removed. Then they are stuffed.

Place the peppers in a deep pot. Pour broth over them, but not all of it. For now, let's make the sauté. Chop the onion and carrot and sauté them.

Add the chopped tomatoes and tomato paste. Pour in the remaining broth. Simmer for about 7 minutes.

Then pour the vegetables over the peppers. You can also add some water or broth if there is not enough liquid. Simmer over low heat until the peppers are cooked. And that's it—peppers with chicken stuffing are ready.
