Peppers stuffed with cottage cheese are an amazing appetizer that I make all the time. I really love the combination of cottage cheese and roasted pepper. Especially in hot weather, you absolutely don’t want to eat anything fatty. So this simple recipe for peppers stuffed with cottage cheese always saves the day. By the way, you can make this appetizer at home or outdoors over an open fire — it turns out equally delicious. I like it even more over an open fire — the smell of smoke makes the appetizer simply divine :) Serve with fresh herbs and sauce.

    Place the peppers on a baking sheet and put them in an oven preheated to 180°C for about 15 minutes. Roast until done, until char marks appear. The eggplants are for another dish—ignore them :)

    Cover the finished peppers with foil and wait until they have cooled completely. Then begin preparing them. Remove the seeds and peel off the skin. Cut the peppers in half or into three pieces.

    Prepare the filling for the peppers. In a convenient bowl, mix together cottage cheese, cheese, finely chopped basil, dill, and parsley. Season with salt and pepper. Processed cheese can be replaced with regular cheese grated on a fine grater.

    Put a spoonful of filling into each pepper and roll into rolls. Arrange the rolls on a serving dish, garnish with dill, and serve.
