
Stuffed peppers with carrots and rice
Description
The dish is prepared without unnecessary complications. You can use not only fresh peppers but also canned ones, as in my case. They are already fully ready for stuffing, which additionally saves time in the kitchen. Besides carrots, you can also add onion to the filling. The finished dish can be served at the table.

Prepare all the ingredients. If using fresh peppers, wash them, carefully cut off the stems, and clean the insides.

Rinse the rice with cold water and place it over heat. After boiling, add salt and cook for a couple of minutes less than the time required for full doneness.

Peel the carrots and grate them.

Sauté the carrots in a pan with heated oil for 3 minutes, stirring. They should become soft but not browned.

Add the cooked rice to the pan.

And a little tomato sauce. Salt, pepper, and mix. Remove from heat and let cool slightly.

Carefully fill the peppers with the stuffing.

Place the peppers in a small saucepan, pour in the tomato sauce (add a little water if necessary), and set over heat.

Simmer the peppers over low heat for 15-20 minutes.
